Ingredients

1/2 cup melted coconut oil
1/2 cup sugar
3/4 cup Stevia in the Raw
1 egg
1 cup origional or vanilla almond milk
1 tsp vinegar
2 cups whole wheat pastry flour
1 tsp baking power
1 tsp baking soda
pinch of salt
Cinnamon sugar mixture:
1/4 cup sugar
1 tsp cinnamon
Directions
Preheat the oven to 350 degrees. Spray a loaf pan with pan spray.
Combine the warm almond milk with the vinegar to simulate "butter milk"; allow to sit while the other ingredients are prepared.
Using a wisk, mix together the whole-wheat pastry flour, sugar, stevia, baking powder, baking soda, and salt.
Add the melted coconut oil and room temperature egg to the almond milk mixture. Add the wet ingredients into the dry ingredients and mix well with a wisk. Pour 1/2 the batter into the greased loaf pan; sprinkle with 1/2 the cinnamon sugar; pour the remaining batter into the loaf pan; top with the remaining cinnamon sugar; swirl with a knife.
Bake for 45 minutes. Allow to cool for 10 minutes before removing from the pan. Best if served warm.
