Ingredients

    1 can black beans (15 oz, drained) or 1 3/4 c cooked
    1 pint cherry tomatoes
    1 avocado, diced
    2 cups cauliflower, chopped
    1/2 small onion, diced
    juice of one lime
    1 T olive oil
    2 t honey

Directions

1. Mix beans, tomatoes, avocado, cauliflower, and onion.
2. In a small bowl, wisk lime juice, oil, and honey (warm if needed to get honey to mix better)
3. Pour the dressing over the vegetables and stir to mix.

Serving Size: Makes 5 large servings
