Ingredients
227 grams (8oz) grams Whole Green canned Chilies
454 grams (1lb) Part Skim Mozzarella - Cracker Barrel
2 large eggs (I use Blue Menu Omega-3 - Eggs)
1 cup 5% M.F. Sour Cream
0.25 tsp Salt
1/8 tsp Pepper
Tips
I like to add a few extra green chilies.
Serve with refried beans, a nice big green salad, &/or tortilla soup.
Directions
Remove seeds from chillies. Cut pieces flat. Put 1 layer in greased 8x8” pan. Sprinkle with ½ of the cheese.
Spread rest of chillies then the rest of the cheese. Beat eggs until frothy. Add sour cream, salt and pepper. Mix. Pour over chilli layers. Bake uncovered in 350F for 45 min, until set. Serve hot. Serves 6.
