Introduction

Just a quick stir fry that I made on the weekend and used as a side to my lunches at work for the week. Just a quick stir fry that I made on the weekend and used as a side to my lunches at work for the week.

Ingredients

    Ingredients:

    1 tbsp Extra Virgin Olive Oil
    1 cup Celery, raw, diced
    1 med Red Onion, quartered & sliced
    1 cup sliced FRESH: Mushroom
    1.75 cup Petite Cut Tomatoes Diced Garlic & Olive Oil
    4 oz fresh bamboo shoots
    4 oz fresh sliced Water Chestnuts, drained
    4 oz Baby Corn
    8 oz fresh Bean Sprouts
    1 tbsp Hot Red Pepper Paste
    1 tsp Ginger Oil
    *1 tsp esame Oil

Directions

Heat olive oil in pan. Sautee celery for 1 minute. Add onion for another minute. Add mushrooms, tomatoes, bamboo shoots, water chestnuts, baby corn, bean sprouts & red pepper paste. Let simmer until heated through. Drizzle with sesame oil & ginger oil.


Serving Size: Makes about 5 servings of 2 cups each
