Introduction

No sugar added. The sweetness comes from the frozen berries and the Cool Whip.

Ingredients

    1 cup 1% milk
    6 eggs
    1/2 cup all purpose flour
    1/2 cup whole wheat flour
    1/2 tsp salt
    1 tsp vanilla

    Topping
    for each one:
    1/4 cup frozen berries
    2 tbsp Cool Whip Lite

Tips

If you like, you can change the topping. Each muffin with no topping is about 60 calories.


Directions

Preheat oven to 400 degrees F. Mix together flour and salt and set aside. Beat together eggs, milk and vanilla til frothy. Add flour. Beat til smooth. (This is not a normal pancake batter.) Slowly add in melted butter.

Add to muffin tins or cups, filling each about halfway. Bake for 15 minutes. Top with berries and cool whip.

Serving Size: Makes 24 servings (2 dozen muffins)
