Ingredients

    Meat Mixture:
    Jennie-O Lean Ground Turkey, 40 oz Package
    Red Ripe Tomatoes, 2 medium whole (2-3/5" dia)
    Peppers, sweet, red, fresh, 1/2 medium (approx 2-3/4" long, 2-1/2"
    Tomatoes, canned with chili peppers (1 cup)
    Onions, raw, 1 medium (2-1/2" dia)
    Garlic, .25 cup
    Cilantro, raw, chopped 2 tbsp
    Green Peppers (bell peppers), 1 cup, strips
    Canola Oil, .25 cup
    Daisy's Sofrito (1/2cup), 0.25 cup
    Cilantro, raw, 1 tbsp
    Colby and Monterey Jack Cheese shredded, 1.5 cup

    Rice:

    Brown Rice, long grain, 1.5 cup
    Onions, raw, .5 medium (2-1/2" dia)
    Garlic, .10 cup
    Cilantro, raw, chopped 1 tbsp
    Frozen Mixed Vegetables
    Canola Oil, .25 cup
    Daisy's Sofrito (1/2cup), 0.25 cup
    Cilantro, raw, 2 tbsp
    Water, 4 cups

    Spices:
    1 tsp. Tumeric
    1 tsp. Adobo with Cumin
    1 tsp. Chipotle Powder
    1/2 tsp. Chili Powder

Directions

Begin by preparing the brown rice ahead of time. Start by heating the oil on medium heat. When the skillet is hot, add cilantro, onions, sofrito, and garlic. Stir until onions are transparent. Add frozen veggies. Stir until veggies are coated with oil. Add brown rice, tumeric and adobo. Mix this around until mixture is coated in oil and begins to turn yellow from the tumeric spice. Add water and cook on medium heat for about 10-15 minutes. Then reduce the heat to low and let it simmer for an additional 30-40 minutes. Seal with a lid and let Rice set after cooking and be sure that all of the liquid has absorbed. Stir only once after liquid appears to have absorbed.

The Meat Mixture:
Use remaining oil and heat a separate pan on medium heat. Add sofrito, cilantro, onions, and peppers. Stir until onions become a little tender. Add fresh and canned tomatoes and adobo seasoning. Stir until tomatoes begin to break down. Add Ground Turkey, chipotle and chili powder. Cook thoroughly until all of turkey meat is browned and the temperature reaches approximately 160 degrees farenheit throughout the mixture.

In a casserole dish, layer the brown rice on the bottom and then top rice with ground meat mixture. Add cheese to the top and you can either serve this immediately or bake in the oven for about 10 minutes so the cheese can melt.
