Ingredients

    Crust:
    1 1/2 C Flour
    3/4 Shortening
    1/2 tsp Salt
    1/4 C Cold Water
    (makes 2 single crusts)

    Filling:
    4 Cups Rhubarb, chopped
    1 Cup Sugar
    2 Tbsp Cornstarch
    2 Tbsp Flour
    2 Eggs, large



Tips

I pre-cook the filling then pour into pie crust before baking. If not pre-cooked, baking time will increase by about 20 - 30 minutes.


Directions

Bake *350 for 60 minutes. Cover pie with aluminum foil for first 45 minutes, then uncover to let crust brown for the last 15 minutes.
