Introduction

A lighter cheesecakey dessert for when you have a craving for something sweet, but healthy. A lighter cheesecakey dessert for when you have a craving for something sweet, but healthy.
Number of Servings: 8

Ingredients

    2 eggs, well beaten
    1 c. ricotta cheese
    3/4 c. milk
    2 TBSP maple syrup
    2/3 c brown sugar
    2 tsp vanilla
    1/2 tsp. salt
    1 tsp. cinnamon
    1/2 tsp. pumpkin pie spice
    2 c. pumpkin

Directions

Spray a springform pan well with nonstick cooking spray. Preheat oven to 325 degrees.

Beat the eggs well. Add the other ingredients and whisk thoroughly.

Pour into prepared springform pan or a 9" square pan. Bake at 325 for one hour or until knife inserted in center comes out clean.

Chill. Serve with nonfat whipped topping.
