Ingredients

1 T olive oil
1 C finely chopped onion
10 oz fresh mushrooms, sliced
8 oz boneless ham, cubed
1 bag frozen broccoli (steamed)
4 slices multi grain bread (cubed)
1.5 C shredded mozzarella cheese
Egg substitute equivalent to 6 eggs
3 C skim milk
salt & pepper to taste
Directions
This is a lighter version of a high fat recipe. I reduced the calories by 150 calories per serving.
Spray a 4-5 quart baking dish with non-stick cooking spray and pre-heat over to 350 degrees.
Pour olive oil into skillet. Add onions; saute until tender. Add mushrooms; saute until browned and dry. Stir in ham and broccoli.
Spread bread cubes in the baking dish. Top with ham mixture and half the cheese. Whisk egg substitute with milk, salt and pepper in a large bowl. Pour evenly over bread; sprinkle with remaining cheese.
Bake uncovered 1 hour or until top is puffed and lightly browned, and a wooden pick inserted in center comes out dry.
For dinner you can serve this with some bread and a salad. For breakfast or brunch, serve with a fruit salad.
