Ingredients

    1. 4 large eggs
    2. 2 8 oz. containers of Cool Whip Light
    3. 2 boxes of any Lemon cake mix extra moist
    4. 1 lb. of powdered sugar
    5. parchment paper
    6. baking sheets (2)
    7. cooking spray
    8. melon or meat baller scoop with flip handle

Tips

The larger the ball the more the cookie will spread on cookie sheet.


Directions

After mixing batter, use a melon or meatballer sprayed with cooking spray dip into batter and place in a small bowl with powdered sugar. Roll batter into a ball by spinning ball in powdered sugar until all the ball is coated. Place each cookie ball on parchment paper spaced 4 inches apart. Bake for 10 - 12 minutes in a preheated 350 degrees.

Serving Size: This is a double batch recipe for cake like lemon cookies. It makes 36 - 40 cookies.
