Introduction

This is a very different smelling and tasting way to cook chicken stew in a crock pot. Number of Servings: 4

Ingredients

    Boneless skinless chicken thighs

    1 onion, chopped

    1 large bag of baby carrots

    3 zucchini, chopped

    1 head of cauliflower, chopped

    Juice of 1 lime

    1 can of diced tomatoes

    1tbsp fresh ginger root

    3 cloves of garlic

    cinnamon, cumin, turmeric, and paprika to taste. (I have a blend of these on hand and add 2 tbsp total to the stew.


Tips

I suggest doing all the chopping and prep work in advance the night before and keeping veggies in bags. It makes mornings go much faster.


Directions

Spray crock pot with olive oil

Put frozen chicken thighs in the bottom, followed by other ingredients in order

Cook on low for 8-10 hours

Serving Size: makes 4 generous servings

    Incredible!
    We loved this. I had no zucchini on hand so added green beans for the last 1/2 hour, also 1 Tbl. finely chopped fresh mint and a large pinch of salt. The green beans and mint were an idea I got from my Primal Blueprint Cookbook. DH had over rice, and I ate mine plain. Will make this again for sure. - 2/22/15
