We loved this. I had no zucchini on hand so added green beans for the last 1/2 hour, also 1 Tbl. finely chopped fresh mint and a large pinch of salt. The green beans and mint were an idea I got from my Primal Blueprint Cookbook. DH had over rice, and I ate mine plain. Will make this again for sure.
