Introduction

These muffins can be modified to use bananas or other fruit instead of the zucchini. If you use raisins or other dried fruits add .25 cups additional water. Ingredients

    1 1/4 cups of Pamela's Baking Mix
    1 large egg
    1/4 cup of sugar
    1/2 cup of zucchini (shredded)
    1 tsp vanilla extract
    1/4 cup of water
    1 T. canola oil

Directions

Mix all ingredients and use the batter to fill greased muffin tins approximately 2/3 full. Bake for 18 minutes at 350 degrees.

Serving Size: Makes 6 muffins.
