This is made with a vegetarian chicken substitute, but can be made with real, precooked chicken as an alternative, in which case, the protein would be higher. Ingredients

    2 cups Fresh Green Beans, tipped20
    3 stalks Celery, sliced diagonally
    2 cups Carrots, sliced
    2 tsp chopped garlic
    1 can cut miniature cobs of corn
    1 can sliced water chestnuts
    1/5 tsp Salt
    1 Tbsp green curry paste
    1 Tbsp Cornstarch
    1 can Coconut milk
    2 small cans (10 pieces) *Worthington Fri-Chik

Directions

Prep all the vegetables and add them to a large frying pan or wok, along with the corn, waterchestnuts, salt and a sprinkle of water. Cover with a lid, and steam only until veggies are tender-crisp. Mix curry paste, cornstarch and coconut milk together, and mix into vegetables with the Fri-Chick or real cooked chicken. Cover again and let simmer for 5 minutes, stirring occasionally. Serve over steamed brown rice.

Serving Size: Makes 8 1-cup servings.
