Ingredients

4 thin slices red onion
1/2 cup chopped red sweet pepper
4 tsp finely minced garlic
4 large portabello mushroom caps
2 tbsp Italian dressing
2 tsp Worcestershire Sauce
4 tsp Classico Traditional Basil Pesto
1 cup Spinach leaves
8 slices Roma tomatoes
4 Arnold Select Sandwich Thins Multi Grain
Tips
Grilling (Foreman or Paninni grill) or pan searing also makes these wonderful ports quickly.
*Worcestershire sauce contains non-vegetarian ingredients.
Directions
In frying pan, heat PAM over medium heat. Add the onion, pepper, and garlic. Saute until vegetables are crisp-tender.
Place mushrooms in a baking pan, cap side up, and brush with 1/2 the Italian dressing and Worcestershire sauce.
Broil for approximately 3-5 minutes. Turn mushrooms over and brush with the remaining Italian dressing and Worcestershire sauce.
Broil for another 3-5 minutes.
Spread top side of the sandwich thin with 1 tsp basil pesto. Layer the spinach, vegetable mixture, mushrooms, and tomatoes on other half of the sandwich thin. Top with pesto dressed top and serve.
