    * Chicken Breast, no skin, 2 breasts, bone and skin removed (cooked)
    * Cucumber (peeled), 1 large (8-1/4" long)
    * *President Fat Free Crumbled Feta, 1 oz
    * Olive Oil, 2 tbsp
    * Hodgson Mill Whole Wheat Couscous, 0.66 cup
    * *Lemon Juice, .25 cup
    * Parsley, 1 cup
    * Onions, raw, .25 cup, chopped


dice chicken and all veggies and mix together. Cook Cous Cous according to package directions. Mix Olive oil and Lemon Juice and add to salad. Mix well and Enjoy!

  • This is fantastic! I made it for lunch today and want a second helping. I would recommend drizzling the olive oil onto the salad right before eating though, as the couscous absorbs the oil and you lose the flavor. - 4/28/08
