Ingredients

    2 cups of Corn (grilled optional)
    1 can (29 oz) Black Beans - drained & rinsed.
    1/2 cup grated Carrots
    1/2 cup Grape Tomatoes - quartered
    1 Serrano Pepper (ribbed & seeded optional)
    2 large Cucumbers - peeled & ribbed. Diced bite size
    1/2 medium/small Red Onion
    2 clove crushed Garlic
    handful of Cilantro - chopped

    Mix all ingredients in a large bowl.

    Dressing:
    Mix Balsamic Vinegar with a small amount of brown sugar (to taste), add Salt & Pepper (to taste).

Tips

--Removing the seeds from the Cucumber keeps the salad from becoming too watery.
--Grilling the corn adds an extra layer of flavor.
--The size and/or amount of any of the ingredients may be altered to taste and preference.
