Number of Servings: 4

Ingredients

    English cucumber - 2 whole, (Peeled)
    Dill weed, fresh, .25 cup (minced)
    Garlic powder, 1 tbsp
    Salt, (to taste)
    Pepper, black, (to taste)
    Nonfat Greek Yogurt, 1 cup
    Baby Romaine or Arugula, 1 cup

Tips

I am guessing on the times, as I have not made it yet. I will update tonight if I find it to be any different.


Directions

Peel cucumbers and place on HOT grill to mark them (turning as necessary). The point is to not cook the cucumber, but to get the grilled flavor.

Course chop (bite size chunks) the cucumber.

Combine next 5 ingredients and mix thoroughly.

Add cucumber and arugula, combine until well coated.
