Introduction

A hearty meal with a cajun twist. We followed the directions on the bag for the most part, but added fresh tomatoes as opposed to canned. We also added jalapenos and ham hocks. Ingredients

    1 Bag (20 ounces) of Hurst's HamBeens, Cajun 15 Bean Soup
    1 onion, chopped
    1 jalapeno, chopped
    1 Tbsp minced garlic
    1 Bay leaf
    Salt
    2 Tbsp Tony Chachere's seasoning, divided
    1 tsp Thyme
    1 lb ham hocks (smoked preferable)
    1/2 beer (Abita or some other Amber)

Directions

Soak beans overnight
Season ham bones with 1 Tbsp Tonys if it is not already smoked
Bring 3 quarts of water to a boil, add beans
Saute onion, ham bones (if they are not smoked), jalapenos - 5 minutes
Add garlic; saute 3 more minutes
Dump into pot of beans
Deglaze saute pan with 1/2 a beer and scrape all the cooked pieces of bottom; add to pot
Add remaining seasonings to pot
Simmer, stirring, for 4-5 hours.
May need to ad water at some point
