Introduction

Homemade veggie burgers! Great on the grill, but good in the oven fro a quick, healthy supper, too! Freeze leftover patties to use later instead of buying expensive products with extra, unhealthy ingredients. Homemade veggie burgers! Ingredients

    1 can black beans, rinsed
    1 can red kidney beans, rinsed
    1 medium sweet onion, chopped
    1 can (small; 10 oz. or so) yellow sweet corn, rinsed
    1 bell pepper (red or green), chopped
    1 1/4 c. bread crumbs
    2 eggs
    2 Tbsp. cumin
    2 Tbsp. chili powder
    2 tsp. Thai chili sauce
    1 Tbsp. dried parsley
    1 dash salt
    1 dash black pepper

Tips

Fresh corn can be substituted for canned corn when in season! Just make sure it's pre-cooked. :)


Directions

1. Preheat oven to 375*.
2. Line baking sheet with foil and spray with non-stick spray.
3. In a large bowl, mash beans together with onions, forming a paste.
4. Add in corn and pepper. Lightly mix.
5. Add in all other ingredients. Mix thoroughly.
6. Form burgers. Place in single layer on baking sheet.
7. If only using oven, bake 15-20 minutes before flipping burgers. Bake 15-20 minutes on other side.
8. If grilling, bake 8 minutes on each side. (This ensures that the burgers will not fall apart or stick to the grill.)
9. Grill 5-8 minutes on each side.
