Ingredients

    1 teaspoon olive oil
    1 teaspoon minced fresh ginger (or substitute ¨û
    teaspoon ground ginger)
    1 clove garlic, minced
    1/2 cup basmati brown rice (or substitute longgrain
    brown rice)
    1-1/4 cups water
    1/8 teaspoon salt
    1/8 teaspoon pepper
    2 teaspoons finely chopped fresh mint

Tips

Serve with Red Lentil and Sweet Potato Stew


Directions

Heat oil in a small saucepan over medium-high
heat. Add ginger and garlic; cook 30 seconds,
stirring constantly. Stir in rice; cook 1 minute.
Add water, salt and pepper; bring to a boil.
Cover, reduce heat, and simmer 45 to 50
minutes or until tender. Fluff rice with a fork; stir
in mint before serving.
