Ingredients

    1 lb. venison
    1 tbsp. olive oil
    1 medium onion chopped
    1 stalk celery chopped
    1 cup chopped carrots
    1 cup frozen peas
    2 cups frozen spinach
    1 cups frozen hash browns
    2 cups Bisquick
    1 cup milk
    2 large eggs
    1 can reduced fat cream of mushroom soup
    3 tbsp. reduced fat sour cream

Tips

Half Bisquick mixture if you don't want a thick bread over the top. Add spices to bread mixture for a twist.


Directions

Sautée onion and celery together in olive oil then add the hash browns. Cook until soft. Add venison or beef and cook until browned. While that is cooking cut carrots and place in microwave safe bowl with spinach and peas. Microwave for 6-7 minutes or until carrots are tender. Add veggie mixture to meat mixture adding 3 tbsp. milk, cream of mushroom, and sour cream. In a greased 9 x 12 glass dish add mixture. Mix Bisquick, eggs and rest of milk. Pour over top of mixture. Bake at 375 degrees for 25-30 minutes.
