Ingredients

    3c cooked and cooled pasta (Garden Rotini)
    2slices cooked and crumbled bacon
    1/4c green bell pepper strips
    2oz fresh baby mozzarella
    1/4c fresh corn
    1tbsp extra virgin olive oil
    2tbsp balsamic vinegar
    salt and pepper to taste

Tips

Adding cooked chicken and/or avocado would be delicious, but increases calorie count.


Directions

Cook pasta according to directions, drain and cool. Toss in all ingredients, except oil and vinegar. Whisk together oil, vinegar, salt and pepper. Pour over salad serve chilled.
