Ingredients

    Sweet peppers (bell), 2 large (2-1/4 per lb, approx 3-3/4"
    Radishes, 6 medium (3/4" to 1" dia)
    Mushrooms, fresh, 6 medium
    Celery, raw, 2 stalk, medium (7-1/2" - 8" long)
    Cucumber (with peel), 1 cucumber (8-1/4")
    *Green Onion (1 Green Onion), 0.5 cup
    *Field Greens Salad Mix (Salad Greens), 4 cup
    *1/2 avocado, 1 serving
    Sunflower Seeds, without salt, .25 cup, hulled
    *Kens Lite Olive Oil Vinaigrette 2 T, 2 serving

Tips

If you'd like to add some carbs to the meal, Italian breadsticks make a nice accompaniment.


Directions

Choose crisp, large green peppers.
Dice radishes, mushrooms, celery, cucumber, green onions, and avocado. Toss gently.

But tops off green peppers, scoop out seeds. Fill with diced vegetable mixture.

Place on bed of salad greens' sprinkle with sunflower seeds. Serve with your favorite light vinaigrette dressing
