Ingredients

    1 lb. whole grain linguine, broken into thirds
    1 red bell pepper, julienned
    1 orange bell pepper, julienned
    6 scallions, white and green, thinly sliced
    1 cup fresh peas
    1 cup vegetable broth
    7 T PB 2 (powdered peanut butter)
    1/4 cup low sodium soy sauce
    2 T asian mirin
    1 T sesame oil
    3 cloves garlic, minced
    2 t red pepper flakes
    1/3 cup chopped peanuts, any style
    1/2 cup chopped fresh cilantro


Tips

PB 2 can be found in larger grocery stores or online.


Directions

Cook linguine as directed on package for al dente. Add peas during last minute of cooking. Drain and rinse with cool water. Set aside. In a small mixing bowl whisk together broth, PB 2, soy sauce, mirin, sesame oil, garlic, and red pepper flakes. Transfer pasta to a large serving bowl. Add peppers, scallions peanuts,cilantro, and dressing. Toss well and chill covered for 2 hours before serving.

Serving Size: makes 10 servings of 1 cup each
