Ingredients

200 grams gluten free flour
50 grams finely ground cornmeal
3 eggs
1 TBS oil
1 tsp salt, and some sparkling water
1/2 TBS butter
3 oz. emmentaler (or any kind of swiss)
Tips
You really need something to make the spatzle with - this can be a large-holed strainer, or you might be able to put the dough through a pasta maker and then boil it.
Directions
mix everything together up through water. Let it sit for 20 minutes
use spatzle thing (see tip) to make spatzle. Put spatzle in oven dish. Put butter over spatzle. Put grated cheese on top. Bake at 350 for 10 minutes.
You could also mix in spinach, steamed zucchini pieces, cherry tomatoes, sauteed mushrooms, pretty much anything you want.
