Ingredients

    1 cup Sweet Corn
    1 small onion finely chopped
    2 Garlic cloves finely chopped
    1 Green chilly finely chopped
    2 tbspn Coriander finely chopped
    2 tbspn mint finely chopped
    1 tspn old spice
    0.5 tspn chilli powder
    1 tbspn lemon juice
    2 tbspn sour cream
    1 Avacado mashed with some salt and pepper
    3 tbspn Extra virgin Olive oil
    1 tbspn butter
    2 tbspn Parmesan Cheese grated

Tips

Serving suggestions
Put it in the bowl. Put the grated cheese. Put the sour cream on top. Add the chilli powder and then sprinkle the coriander and mint
On the side put the avacado mash. Serve immediately


Directions

Caramalise the chopped onions in the olive oil
Add the garlic and chillies
Sprinkle the old spice
toss in the corn with some salt and pepper
Add the mint and coriander leave some aside for decoration
Add a dollop of butter and sprinkle the lemon juice
Let it cook for another 10-15 mins
