Ingredients

    .2 C Soft Wheat (Dry)=4 C Boiled/Drained
    .5 C Adzuke Beans=1 C Boiled/Drained
    .5 C Jalapeno (8 Tbsp)
    1 C Zuchinni
    1 C Red Pepper
    1 C Carrot
    1 C Celery
    1.5 Onion (.5 Green Onion & 1 C Spanish Onion)
    .5 C Lemon Juice (8 Tbsp) OR can use .5 Apple Cider
    Vinegar
    .25 Olive Oil (4 Tbsp)
    2 Tsp Dry Dill OR .5 C Fresh Dill
    1 Tbsp Parsley
    2 Tsp Oregano
    2 Tsp Season Salt
    2 Tsp Garlic Powder
    .25 Tsp Cayenne Pepper

Tips

You can experiment with different herbs/spices and dressing ingredients. Example: Add chili powder or cumin; use vinegar instead of lemon juice, balsamic vinegar, greek salad dressing, sundried tomatoes or sundried tomato dressing, etc.....


Directions


Serving Size: Makes 9 cups. 1 serving=1 Cup
1. In large pot with about 6 cups water, boil, rinse & drain the soft wheat. It will have a soft, chewy texture when cooked.
2. In a small pot with about 2 cups water, boil, rinse & drain adzuke beans.
3. Dice all vegetables: Jalapeno, Red Pepper, Carrot, Celery, Onion.
4. Squeeze .5 C fresh lemon juice.
5. Mix all herbs & spices together: Dill, Parsley, Oregano, Season Salt, Garlic Powder, Cayenne Pepper
3. In large bowl or Tupperware, mix soft wheat, adzuke beans and all other ingredients together.
