Ingredients

    2 1/2 Whole wheat flour
    3 Scoops Gold Standard 100% Whey Protein Isolatate
    1/2 cup unpacked brown sugar
    3/4 cup stevia
    3/4 tsp baking soda
    tsp baking powder
    3/4 tsp salt
    3/4 tsp nutmeg
    3/4 tsp cinnamon
    1/2 tsp pumpkin pie spice
    3/4 tsp Allspice
    1 tsp vanilla extract
    4 eggs
    1 vanilla caramel sugar free pudding
    1 1/2 cup almond milk
    12 almonds
    1 small apple
    15 oz Pumpkin puree

Tips

These are not mini muffins.

When muffins are cooked take them out of the baking pan. Put all muffins on a plate to cool then refrigerate or freeze.


Directions

Preheat oven to 350 degrees F (175 C). Grease two 12 cup muffin pans, or line with paper muffin liners.

Chopp apple boil in 3/4 cup water until soft then blend into puree.

Put almonds in food processor or blender and ground them.

In a large bowl, combine the flour, protein powder, sugar, stevia, baking powder, baking soda, salt, nutmeg, cinnamon, pumpkin pie spice and all spice .

In a separate bowl, mix the eggs, pumpkin puree, and applesauce and vanilla extract until smooth.

Add this mixture to the dry ingredients and stir thoroughly to make a smooth batter.

Spoon batter into the prepared muffin cups and sprinkle with grounded almonds

Bake for 30 to 35 minutes in the preheated oven, or until a toothpick inserted into the center comes out clean.
