Ingredients

50 sliced green olives
7 sliced scallions,with green
4 stalks celery, sliced
about 2 heads of cauliflower, in1" flowerettes
6 Tbs fresh parsely, choppped
4 Tbs capers
.5 tsp salt
black pepper to taste
.67c olive oil
4Tbs fresh lemon--zest it first!
Directions
Place large pot, about half full of water, on stove to boil.
Rinse cauliflower and cut into 1" pieces.
When water boils, add cauliflower.Wait till it returns to a boil and time it for 5 minutes.
Pour cauliflower into a strainer and rinse with cold water to halt cooking process. Allow it to drain well.
Slice the olives, celery, scallions.
Chop the parsely.
Wisk lemon juice, salt and pepper in a medium bowl.
Continue wisking as you slowly add in olive oil.
Combine olives, capers, scallions, celery, parsely, and lemon zest in a large bowl.
Pour in the dressing and mix well.
Gently fold in the well-drained cauliflower so it doesn't get mushy.
Chill about 3 hours or longer for best mixing of flavors.
Makes about 16 3/4 cup servings.
