Ingredients

Lentils, 1 cup dry
Organic Textured Soy Protein, 1 cup dry
Tomato Paste, 6 oz
Cumin, 2 tsp
Chili powder, 2 tsp
Salt, 1/3 tsp (or according to your personal salt preference)
Black Pepper, 1/2 tsp (or according to your personal preference)
Green Peppers 1/2 cup, chopped
Onions, raw, 1/2 cup, chopped
Carrots, 1/2 cup, chopped
Cane Sugar, 2 tsp
Garlic, 2 cloves, diced
Rice Vinegar, 1 tsp (optional)
2 cups water
Tips
If you don't have Textured Soy Protein, you can omit it completely or use faux-meat crumbles from the freezer section of most grocery stores (same thing as TSP -- just already re-hydrated and more expensive). If you do either of these things, be sure to subtract 1 cup of water from the recipe!
Directions
Bring a pot of water to a boil, add lentils and carrots and simmer for about 30-60 min(or until lentils are tender). Drain. Mix Lentils and carrots with all other ingredients in a big pot and stir together. Cook on low for 20-30 min, or until most of the excess liquid has evaporated. Stir occasionally while it is cooking
