Ingredients

6 cups spaghetti squash
1 large red tomato
1 orange heirloom tomato
1 onion
4 cloves garlic
1 yellow bell pepper
1 red bell pepper
1/4 cup olive oil
Tips
A little sprinkle of parm on top is good, but not necessary.
We have this twice a week as dinner just to up our veggie intake and we LOVE it.
Directions
Cut a spaghetti squash in half and scoop out the seeds. Fill the cavity with water, put the top half back on the squash, place the whole squash in a microwave safe dish, and microwave for 15 minutes.
Roughly chop all remaining ingrediants except oil. Place in a large bowl. Pour oil over chopped vegetables and stir to coat. Add salt and pepper.
Scoop the warm spaghetti squash onto the vegetable mixture. Toss together.
Serving Size: 4 giant servings - not "measured," I just split it into four "evenish" heaps
