Ingredients

    1 can (14.5oz) diced tomatoes
    1 can (8oz) tomato sauce
    2c water
    1tbsp olive oil

    1/2" thick onion slice, diced
    4 cloves garlic, minced
    3/4c sliced zucchini
    1/2c sliced baby portabella mushrooms
    1/4 of a green bell pepper, diced

    1/2tbsp dried rosemary
    1/4tbsp dried oregano
    1tsp dried basil
    1/4tbsp dried parsley

    garlic salt
    salt & pepper

Directions

in medium saucepan, bring tomato sauce and diced tomatoes (juice as well) to a boil, add bell pepper, zucchini and half the garlic, reduce heat and simmer until most water is evaporated, stirring occasionally

meanwhile saute mushrooms in olive oil until softened, add onion and remaining garlic, saute until onion is transparent

add herbs, garlic salt and mushroom mixture to sauce, stir well, add salt and pepper to taste

add water, simmer 20-30 minutes stirring occasionally
