Ingredients

    1/2 c sweet butter room temp
    1 cup truvia
    2 large eggs
    1.5 tsp vanilla
    2 cups unbleached all purp flour
    1 tsp baking powder
    1/2 tsp baking soda
    pinch salt
    zest of 1 lemon grated
    1/3 cup finely chopped crystallized ginger
    1/4 c buttermilk
    1.5 cups chopped peeled and cored pears

I substituted sugar w truvia and greased loaf pan w Pam


Directions

Preheat oven 350 and grease loaf pan. In large bowl, cream sugar and butter. Add eggs one at a time until just mixed. Add vanilla until just mixed.

In sep bowl, combine dry ingredients, including ginger and lemon, and mix. Add slowly to wet mixture, alternating with buttermilk, beat just until smooth.

Gently fold in pears. Spread into loaf pan and bake in center of oven until toothpick inserted in center comes out clean - 55 to 65 mins. Turn loaf out onto rack and then turn right-side-up to cool completely before slicing.

Serving Size: 10 Slices per loaf
