Ingredients

2 cups green cabbage, chopped
2 carrots
1 red bell pepper, diced
1 tbsp light mayonnaise
1/4 cup fat free greek yogurt
3 garlic gloves
5 tbsp fresh cilantro
juice of 3 limes
salt and pepper
Directions
1. Finely chop cabbage into bite-sized pieces, place into large bowl
2. Peel skin from carrots then grate carrots into bowl
3. Finely julianne red bell pepper, add to bowl
4. Create dressing by blending together mayo, yogurt, garlic, cilantro and lime juice in a food processor. Allow to sit for 5 - 10 minutes.
5. Toss dressing with other ingredients, add salt and pepper to taste, serve chilled.
