Ingredients

    1 Flour Tortilla
    2 Tbsp Black Beans (rinsed)
    2 Tbsp Corn (rinsed)
    1/3 Cup Daiya Cheddar Cheese Shreds (or regular cheese)

    1/3- 1/2 cup Santa Fe Tortilla Strips

Tips

I sometimes use a little bit of chipotles in adobo sauce in the mixture for a little spice.


Directions

Mix corn, black beans, and cheese together in a bowl. Put in microwave and heat until cheese is melted throughout the mix. Pour the mixture into a line on the tortilla. Top with tortilla strips.
