Introduction
I have also made this without the pasta for low carb. My kids eat it better with the pasta, but I made it for a party where many people have low carb diets and they all liked it without the pasta. Either way one of my favorites. I have also made this without the pasta for low carb. Ingredients
-
6oz (half box) Whole Grain Rotini pasta
2 green peppers cut into chunks
3 roma tomatoes, seeds removed, cut into chunks
2 cucumbers, seeds removed, cut into chunks
1/2 red onion chopped
3 oz feta, crumbled or cubed small
dressing:
zest and juice of one lemon
2 Tbsp balsamic or honey wine vinegar
1/4 cup olive oil
1 clove garlic minced
handful of fresh basil (chop) or 1 Tbsp dried basil
1/2 tsp dried oregano
1/2 tsp dried thyme
Tips
To seed the cucumbers, cut lengthwise into quarter wedges then the seeds will be easy to cut off down the length of the cucumber. Removing the seeds from the cucumber and tomatoes gives the salad a fresher feel and look. The seeds make it a little slimy and less appealing. I have also used cherry tomatoes and leave them whole.
Directions
Cook pasta to desired tenderness, drain and refrigerate or let cool. Prepare dressing adding ingredients in order given then stir with wisk.
