Ingredients

    1 lb boneless skinless chicken breast
    1 cup sugar free apricot preserves
    1 cup water
    6 tbsp lite soy sauce
    1 can (8 oz) sliced water chestnuts, drained and liquid reserved
    1/4 cup dried apricots, diced
    1 tsp ground ginger
    1 tsp garlic powder
    3 ribs celery, sliced
    2 cups sliced mushrooms
    1 cup pea pods
    1 green bell pepper, cut into strips

Directions

1. Preheat oven to 350.

2. In a medium pot over low heat, combine preserves, water, soy sauce, liquid from water chestnuts, apricots, ginger, and garlic powder. Simmer until bubbly, stirring constantly.

3. Place chicken in a medium size baking pan, sprayed with cooking spray. Pour over chicken. Sprinkle celery, pea pods, water chestnuts, and bell pepper over top. Cover with aluminum foil.

4. Bake for 30 - 40 minutes, or until chicken is cooked thru and vegetables are tender.
