Introduction

Ingredients

    1 cup cooked leftover white Quinoa
    1/3 C quinoa flour
    pinch sea salt
    1/4 tsp. baking powder
    1/4 tsp. xantham gum

    1 tbls. coconut oil softened or melted
    1 tsp. vanilla extract
    1 tbls. maple syrup
    1/2 cup lowfat milk or substitute
    1 extra large egg


Tips

To be 100% gluten free be sure to use gluten free ingredients. Milk may be substituted with rice milk, plain coconut milk, etc. There is no carb crash after eating these pancakes!! They'll keep you going for hours!


Directions

Put first list of ingredients in a bowl, then add wet ingredients until blended. Batter will be slightly thick. Using a non-stick pan or well seasoned cast iron skillet coat with a small amount of coconut oil and scoop batter in to pan making pancakes about 4” in diameter. Cook until browned and flip.
