Introduction

Number of Servings: 10

Ingredients

    1 Cup Quinoa (pre-rinsed!)
    1 package (10 oz) frozen shelled edamame
    1/2 Cup pine nuts - toasted
    1/2 red bell pepper - diced
    1/2 yellow bell pepper - diced
    1/2 red onion - diced
    1/2 cup craisins

    Dressing:
    1/4 cup olive oil
    1/8 cup red cooking wine
    1/8 cup balsamic vinegar
    1 Tbsp honey mustard
    2 Tbsp Agave nectar
    1 tsp salt
    Fresh black pepper to taste

Tips

I tend to double the dressing recipe so I have it ready to make another salad! It keeps very well in the fridge.


Directions

Cook quinoa in 2 cups of boiling water for 13-15 minutes. Cook edamame in salted boiling water for 5-6 minutes.
Add all salad ingredients together in bowl and toss with dressing. Can be made in advance.
