Ingredients

    1 1/4 Package Jennie O Turkey Sausage
    (Optional - minced dried onions to taste)
    3-4 oz Low Fat Cream Cheese
    1/2 cup (approx.) finely chopped broccoli or chopped spinach,
    12 eggs, large
    1/2 cup (approx) shredded cheddar cheese

Tips

This could also be made in a 9x13 pan. I also added a couple of tablespoons of minced dried onions as I cooked the turkey sausage.


Directions

Brown turkey sausage (with minced dried onions, optional). Press sausage into bottom of 12 cup muffin tin sprayed with Pam. Spread about 1/2 T of cream cheese in each muffin cup. Add broccoli or spinach layer. One at a time, beat each egg and slowly pour over each cup contents. Top with a sprinkling of shredded cheddar cheese. Bake at 350 degrees for 18-20 minutes.
