Introduction

It's like chili and salsa in one! It's like chili and salsa in one!
Number of Servings: 12

Ingredients

    3 chicken breasts; cooked and torn apart
    1 green pepper
    1 yellow onion
    1 can corn
    1 can red kidney beans
    1 can white northern beans
    1 can diced tomatoes
    1 can tomato sauce
    1 can chicken broth (low sodium)
    1 can water
    1 tsp chili powder
    1/2 tsp cumin
    1/2 tsp cayenne pepper
    1 TBSP dried parsley

Tips

Even though it would up the fat and salt, I enjoy this soup with Ruffles on the side; I eat the chicken and beans out of it and then scoop up the rest with chips like salsa.


Directions

1) Cook chicken, remove and tear into pieces.
2) Chop pepper and onion into small pieces.
3) Add chicken, pepper, onion, all canned items, and spices to crockpot.
4) Let cook in crockpot until boiling and simmer; the longer it simmers the better it is!
5) Best with Ruffles on the side!
