Ingredients

4 Egg yolks
1/4 cup Olive Oil
1/4 cup Coconut Oil
1 oz lemon juice
1/2 oz Apple cider vinegar
1 tbsp Dijon mustard
Salt to taste.
Tips
All the seasonings are really to taste, use them last!
Make sure you have a cake spatula, to get it all out of the blender/food processor.
Directions
1. Pre-measure your oils and have them ready to go.
2. Separate yolks from whites and blend at medium speed in blender first.
3. Slowly add a little Olive oil to eggs at medium speed to emulsify.
4. When emulsified, slowly drizzle oils at a steady pace.
5. Add a little lemon juice and vinegar and add until you like the taste.
6. Add Dijon Mustard a little at a time until you like the taste
7. Add salt a pinch at a time until you like the taste.
8. Store in a glass jar in the fridge.
