Number of Servings: 9

Ingredients

    2 cups liquid egg whites
    6 whole large eggs, beaten well with the egg whites
    2 cups fresh zucchini, chopped
    1 1/2 cups mushroom slices and pieces
    1/3 cup green bell peppers, chopped
    1/3 cup yellow bell peppers, chopped
    1/3 cup onions, chopped
    some fresh cilantro if desired
    6 tbsp smart balance buttery spread
    1 sleeve nabisco ritz crackers (30 crackers) pulverized/nearly powdered
    3 seconds non-stick butter flavored baking spray
    9 slices American cheese
    1 cup part skim shredded mozzarella

Directions

Prepare veggies by sauteing them in a large skillet. Cover to speed up cooking process, but remove lid and let liquid reduce to almost nothing. in the last five minutes.
Preheat oven to 350.
In a 9" X 13" two-inch deep baking pan, line with foil or just spray with non-stick cooking spray so coated. Layer cracker crumbs evenly on the bottom. Spread out the slices of American cheese. Spread out the veggies. Cover with the egg. Sprinkle top with mozzarella. Bake about 25 minutes or until firm. Let set for 5-10 minutes before slicing and serving.

Serving Size: Makes 9 equal sized portions

    Just FYI, too, the crackers swell back up into quite a nice crust!
