Ingredients

8 Eggs
1 C Bisquick
1 Large Yellow or Red Pepper
1 C Asparagus (cut into 1/2" chunks)
2 C Fresh Mushrooms
(add some chopped onion if desired)
1 Tbs. garlic powder
1 dash of salt
1 dash of pepper
1/2 C parmesan or romano cheese
Directions
Cut up mushroom into thin slices and put aside.
Cut up pepper into small dices and put aside.
Cut up asparagus into 1/2" pieces and put aside.
In a seperate bowl, mix eggs along with salt, pepper, garlic powder and cheese.
Add bisquck, then add veggies and mix until everything is incorporated. Coat pan with non-stick spray and pour in, allowing a bit of room for quiche to expand. Cook for 30 minutes or until the center is firm and does not "shake". Top and sides should be slightly browned. Cut into 8, 2x2" pieces (depending on the shape of your pan-you could also do this in a pie shaped pan). Enjoy!
