Introduction

Created to use some of the zucchini and summer squash from our garden. Created to use some of the zucchini and summer squash from our garden.
Number of Servings: 16

Ingredients

    3 pounds of Boneless and Skinless Chicken Thighs
    20 cups of Chicken Broth
    1T Tastefully Simple Garlic Garlic
    1T Onion Powder
    1T Italian Seasonings
    1 Large Onion
    2 pounds of Chopped Zucchini & Summer Squash, mixed
    1 cup White Long Grain Rice

Tips

The nutritional information may be off some because I could not input the chicken base that I add to water, so I exchanged it with chicken broth. Hopefully the flavor will be as good.


Directions

Add first 6 ingredients into stock pot and bring to a boil. Lower heat to simmer. Simmer 30 - 45 minutes until the chicken is cooked. Add zucchini/summer squash mixture and rice and bring back to a boil. Lower heat to simmer. Simmer an additional 30 - 45 minutes.
