Introduction

Spicy low carbohydrate meat loaf that is sure to please! Spicy low carbohydrate meat loaf that is sure to please!
Number of Servings: 4

Ingredients

    1 lb. 80/20 ground beef
    1 large green bell pepper diced
    1 med onion diced
    1 large egg
    1 can Ro-tel Tomato's and green chili's
    1/4 cup ground Flax seed
    Salt and pepper to taste

Tips

I find that a little higher fat meat makes a more flavorful meat loaf. You can substitute tomato sauce on the top if you like. Salt and pepper to taste.


Directions

Dice veggies place into a large mixing bowl. Add the ground beef, egg, flax seed and 1/2 can of the Ro-tel tomato's. Mix well. Place into a 9 x 9 baking dish and form into a loaf. Spread the rest of the can of Ro-tel tomato's evenly on top of the loaf. Place in a preheated 350 degree oven for 1 hour. Let stand for 5 minutes before slicing.
