An all-natural, delicious salad that goes well any entree! An all-natural, delicious salad that goes well any entree!

Ingredients

    1/2 large seedless cucumber, diced
    1/3 c. raw sweet onion, sliced thin
    1/4 c. chopped fresh dill
    1/4 c. chopped fresh mint
    2 T. fresh lemon juice
    2 T. extra virgin olive oil
    4 oz. reduced-fat feta cheese
    salt and pepper, to taste

Tips

The original recipe called for regular feta, but we've slimmed it down a bit by using reduced-fat feta. This recipe can be lightened even more by using less olive oil or feta.
