Ingredients

    2 tablespoons coconut oil
    1 lb grass fed beef / stew meat
    1 tsp salt
    1/2 tsp ground pepper
    3/4 chopped onion
    3 cloves garlic, chopped
    2 tbs tomato paste
    2 tbs worcestershire sauce
    2 cups cauliflower
    1 lb mushrooms
    2 cups water
    4 customer organic beef broth
    1 tbs thyme

Tips

Original recipe called for celery - substituted cauliflower for a 'potato' substitute. I would sub any low carb fresh veggie I had to make it more robust.

cook beef (with salt and pepper) in coconut oil to brown - 7-9 minutes - in large stock pot. remove meat and saute onion, garlic and thyme in juices. Stir in tomato paste and worcesterchire sauce. add mushrooms and cauliflower. stir to coat and saute for a few minutes. add beef, water and stock - crock on low...
