Ingredients

    2 MF Banana or chocolate pudding envelopes, dry
    1/4 cup cold water
    1/2 cup eggbeaters
    1 tsp baking powder
    Dash of cinnamon
    Drop of banana SF Torani syrup (optional) and/or
    1/2 tsp banana extract or SF chocolate syrup
    3-4 packets Splenda or to taste
    2 TBLs Flaxseed meal

Tips

Wet your fingers when placing batter into muffin cups and pat down....makes it easier.


Directions

Preheat oven to 350. Mix together all dry ingredients, mix well. Meanwhile PAM-butter-spray a 6 cup muffin pan (WELL). Then add water and eggbeaters to dry ingredients as well as banana SF syrup and/or extract, if desired. Mix well. Batter will be thick. Pour/pat into the 6 muffin cups and bake for 15 minutes at 350 or until golden brown. Remove and allow to cool completely before removing from pan. The muffins will 'fall' a little bit but it won't affect the taste.
